The CÎROC Collective is a strategic alliance between CÎROC vodka and five of Australia's most creative entrepreneurs: Maurice Terzini, Paul Wilson, George Gorrow, Mikey Nolan and Dan Single. Longstanding friends and ongoing business partners who have all contributed richly to the hospitality, fashion, arts and music scene in Australia for many decades, The CÎROC Collective have now launched their first collaborative venture in Sydney's Darlinghurst.
The venue, an elevated, modern, loft style space on iconic Victoria Street, is spread over two levels with Salon De Thé featuring French Vietnamese cuisine and Bar De Thé, Sydney's first martini bar.
French for tearoom, Salon De Thé features an intimate dining room with a large enclosed balcony and seating for 46 where wait staff are clad in chic silk and bartenders wear bowties. Salon De Thé's menu is a modern take on French/Vietnamese cuisines by chef Julien Perraudin (Botanical, Melbourne), featuring seasonal produce, aromatic and herbal influences, infusions and tea smoking and dishes full of personality.
Bar De Thé, located above Salon De Thé, is a specialist martini focused cocktail bar with French Vietnamese luxe street bar food. Highlights include CÎROC tea infusion cocktails and the CÎROC Collective's reinterpretation of cocktail classics. With capacity for 100 people, double height ceilings and a large balcony, it is one of the most unique bar spaces in Sydney.
The CÎROC Collective comment: "We saw a real opportunity to highlight one of the most sophisticated and luxury white spirit based drinks. Cocktails that are classy, chic, potent, fragrant and invigorating. We were drawn to the Victoria Street Darlinghurst location, bordering the CBD and eastern suburbs, because of its history and mix of great cafes, bars and restaurants as well as its diverse European feel."
